How to Make Moist banana and pecan muffins At Home

Ingredients For Moist banana and pecan muffins


  • 150g plain flour
  • 1 1/2 tsp baking powder
  • 55g butter or margarine, at room temperature
  • 80g caster sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 3 medium bananas, mashed
  • 50g pecan nuts, roughly chopped
  • 10 whole pecan, to garnish (optional)
  • 5 tbsp fresh milk

Method For making Moist banana and pecan muffins

  • Preheat oven to 190°C. Line the muffin tin with 10 paper liners.
  • Sift the flour and baking powder into a small bowl and set aside.
  • With an electric mixer, cream the butter and sugar together. Then, add the egg and vanilla extract and beat until fluffy. Mix in the banana.
  • Add the pecans. On low speed, beat in the flour mixture alternately with the milk. Do it in 3-4 batches.
  • Spoon the mixture into the prepared liners, filling them two-thirds full. Bake in preheated oven for 22-25 minutes, or until a skewer inserted into the centre of the muffin comes out clean.
  • Allow to cool in the tin for 10 minutes, before removing and placing on a wire rack to cool completely. Top each muffin with a whole pecan nut, if desired.

Scaring Up a Little Halloween Fun with Witch Treats! {Recipe}


Ingredients {for 8 Witch Treats}:
  • 40 pieces STARBURST® Fruit Chews FUN SIZE®
  • 1 cup M&M’S® Brand Chocolate Candies for Halloween
  • 1 can of prepared chocolate frosting
  • 8 (3 1/2-inch) packaged chocolate cookies
  • 8 ice cream cones
  • 8 Green apples
  • Scissors
Directions:
  • Cover the cookies with chocolate frosting and place one ice cream cone on top of each one. Frost the cones.
  • For the fringe: I used 4 STARBURST® Fruit Chews for each hat. Cut each STARBURST® in half and then use scissors or a knife to cut the fringe. Arrange the fringe around the base of the cone and arrange M&M’S® Brand Chocolate Candies in random patterns. Cover the cone with candies of your choice. I used M&Ms White Chocolate Candy Corn and plain M&Ms.
  • This next step is completely optional. The fringe from the previous step could be the witch’s hair OR it could be a cute accessory for her hat :) I have a thing for braids. It may be because I don’t have any little girls but I used braids on my B-Witchin’ Pumpkins too :)
  • Choose STARBURST® Fruit Chews in the color of your choice. Flatten, roll, and stretch until they are nice and long. Cut in half and braid. I used another STARBURST® to make ribbons for the braids cause I’m cool like that.
  • Press the top of the braids firmly onto the apple and cover with more chocolate frosting. Carefully place the hat on top of the apple and press down gently. I was going to leave it just like that – but then I thought my little witch need a nose so out came another STARBURST® that I shaped into a nose.

 Gingerbread Man + Hello Kitty Biscuits

Making these gingerbread biscuits with the kids was very fun.The dough was easy to handle, but because of the hot climate, it got a little sticky towards the end. The kids enjoyed drawing faces and decorating their gingerbread men. We also bought a Hello Kitty cutter, which we used for the first time. It's slightly more tricky using the Hello Kitty cutter as a little more precision is required (ie how thick to roll out the dough as it affects the "legs" of the Hello Kitty and helps it stand). We were very happy with how the biscuits turned out. A beautiful assortment of different shapes!

Hello Kitty Gingerbread Biscuit

Gingerbread Biscuits

  1. Preparation time: 30 minutes
  2. Cooking time: 10 - 12 minutes
  3. Makes about 20

Ingredients
  1. 1 2/3 cups all purpose flour
  2. 1/4 tsp salt
  3. 2 tsp baking soda
  4. 1 heaped tsp ground ginger
  5. 1/2 tsp ground cinnamon
  6. 4 tbsp unsalted butter
  7. 1/2 cup brown sugar
  8. 1/3 cup golden syrup (or dark corn syrup)
  9. 1 tbsp evaporated milk (I omitted this)

1. In a saucepan over medium low heat, heat the butter, sugar and syrup together until dissolved and allow to cool.

2. Sift the flour, salt, baking soda and spices together into a bowl. Once the syrup mixture has cooled, mix into the dry ingredients with the evaporated milk (if using) to make a dough. Chill in fridge for 30 minutes.

3. Preheat oven to 375F/190C and grease two baking sheets. Roll out the cookie dough to about 1/4 inch (5mm) thick and cut into desired shapes (gingerbread man / Hello Kitty / heart).

4. Place on the baking sheets, allowing a little space to spread, and bake for 10-15 minutes until golden. Remove from the oven and let cool slightly for 10 minutes on the baking tray. Transfer to wire rack to cool completely.
