Rotisserie Chicken Salad Sandwich


Ingredients:
  • 2 c chopped, cooked chicken
  • 1 c diced apple (I use Gala)
  • 1/2 c raisins
  • 1/4 c mayonnaise
  • 1 tsp celery seed
  • salt and pepper to taste
  • bread (your choice)

Directions:
  • Chop up the chicken using your choice of dark or white meat – I use both. Dice the apple into small, bite-sized pieces.
  • Combine all ingredients in a bowl and stir until the mayonnaise is evenly incorporated. Chill for at least thirty minutes.
  • Serve on your choice of bread with lettuce or sprouts. I love this recipe on Sourdough Walnut Wheat Bread - yum! This is really the perfect weeknight meal and the flavors are so lovely – delicious and nutritious!

Easy, Cheesy, Chicken Parmesan Sandwiches & Family Game Night



Ingredients:

  • Tyson Chicken Nuggets
  • Mozzarella Cheese
  • Marinara or Pasta Sauce
  • Parmesan Cheese
  • French Rolls
  • Ore Ida French Fries
  • Heinz Ketchup

Directions:
  • Cook the Golden Crinkles an Chicken Nuggets according to the package instructions.
  • While those are cooking, take out the rolls and sprinkle some of the Parmesan cheese on the rolls. Any Parmesan cheese will work – I happened to have some Shaved Parmigiano Reggiano cheese on hand. Throw those into the same oven and let the rolls toast for 3-5 minutes.
  • Once the Chicken Nuggets are cooked, place them on top of the rolls and sprinkle with more Parmesan cheese.
  • Spoon on 3-4 tablespoons of sauce.
  • And then cover with mozzarella cheese. You can use shredded, fresh, or slices. Whatever you have will work :)
  • Throw the sandwiches back into the oven and bake until the cheese is nice and melted {3-5 minutes} and get ready to enjoy!
  • For the kids’ plates I stacked the Golden Crinkles like Lincoln Logs because on Family Game Night – food is FUN too! I squeezed the Heinz Ketchup into the center for dipping – the boys LOVED this.

Ingredients
  • turkey, sliced {leftover turkey works great!}
  • 8 strips baked bacon, cut in half {2 per sandwich}
  • 2 Tbls sour cream
  • 1 avocado
  • 4 slices Swiss cheese
  • lettuce {optional}
  • tomato slices {optional}
  • bread {we use sourdough}

Directions :
  • Preheat a skillet over medium heat.
  • Butter one side of a piece of bread and place it butter-side down on the skillet.
  • Add a slice of cheese and then layer bacon and turkey.
  • Top with another slice of bread that has been generously buttered.
  • Flip the sandwich when lightly browned.
  • Grill opposite side until nicely browned and remove from skillet.
  • Meanwhile, mix together 1 ripe avocado and 2 Tbls of sour cream. I use about 1/4 of an avocado per sandwich.
  • Spread the avocado mixture on the piece of bread that does not have melted cheese.
  • Layer on lettuce and tomato if desired. Enjoy!

Philly Cheesesteak Sloppy Joes


Ingredients

  •  1 lb. ground sirloin
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1/4 cup A1 sauce
  • 1 cup beef broth
  • Salt and pepper
  • 4 dinner rolls
  • 1 tbsp. butter
  • 1 tbsp flour
  • 1 cup milk
  • 1 cup provolone cheese (we used Pepperjack)

Directions:


In a skillet, brown ground sirloin with the onion and green bell over medium high heat. 
Drain, if needed.

Add A1, broth, salt and pepper, to taste. Simmer for a few minutes.

In a saucepan over medium heat, melt butter. Whisk in flour and cook for 1 minute.
Add milk and bring to a boil. Let thicken for about 2 minutes. 
Remove from heat and add cheese, stir until melted.
 Look at all the melty goodness!

Serve meat on buns (toasted if you like) topped with the cheese sauce.

Mediterranean Turkey Sandwich

Mediterranean Turkey Sandwich



  1.     10 oz can artichoke hearts, drained
  2.     1/2 cup roasted red peppers
  3.     1/4 cup onion
  4.     1/2 banana peppers, mild
  5.     1-2 tbsp balsamic vinegar
  6.     1 tbsp extra virgin olive oil
  7.     Dash of red pepper flakes
  8.     8 sandwich rolls
  9.     1 lb deli turkey
  10.     reduced fat feta cheese crumbles
  11.     lettuce
  12.     shredded carrots

Directions:

  •     In a blender or food processor, add artichokes and the next 6 items. Blend until is a paste consistency.
  •     Warm sandwich rolls in the oven. Split and spread both sides of bread with the artichoke mixture.
  •     Top with turkey, feta cheese crumbles, lettuce and shredded carrots.

 Bacon Chicken Avocado Club Sandwich with Garlic-Basil Mayo

 

What you need: 

Garlic-Basil Mayonnaise: 
1/2 cup mayonnaise 
 3 garlic cloves 
 6 basil leaves Salt and pepper

Sandwich: 

3 to 4 thin chicken breasts, grilled 
8 slices good-quality bread, toasted 
4 slices cheese of your choice 
 8 slices bacon, cooked and cooled 
2 avocados, sliced 
1 tomato, thinly sliced 
1/2 red onion, thinly sliced 
 Lettuce 

Directions: 

 Mix together the mayonnaise ingredients and refrigerate for a few hours prior to let the flavors marry. 

Build your sandwich with all the ingredients and a bit of the garlic-basil mayo.
